Differences that matter

AF refinement on EF L super-telephotos: Viltrox EF-EOS R5 v1.10 firmware specifically refined AF for EF 70-200 f/2.8L IS III and EF 100-400 f/4.5-5.6L IS II on R3 / R5 — continuous-AF tracking is on par with Canon's own adapter on these lenses.
